There's a way that this French mill, "Grand Moulins de Paris" [est. 12th century] treats its flour milling process. It creates a beautiful open textured loaf, combined with a taste twist simply not available from Australian flour.
The 65% ash content makes this bread a creamier crumb colour than Imported French Flour T55.
The Deactivated and Dehydrated Rye Sourdough in flour gives a very nutty flavour almost like sourdough.
