Saf-Instant Gold is a granular free-flowing yeast for use in doughs with sugar levels from 10 – 30% (Baker’s Percent).
What Is Dry Yeast?
Dry yeast comes in two forms: active and instant. Saf-Instant Gold is an instant dry yeast, meaning that it is ready for use the moment you open the package.
Due to its small grain size, it will dissolve easily in the dough, so there is no need for rehydration.

For doughs that are not high in sugar and fats, yet require an instant dry yeast, use Saf-Instant Yeast.
How Do I Use Saf-Instant Gold Dry Yeast?
Mix with flours or add to dough during first stage of mixing. Use 1%-3% based on the weight of your flour.
Avoid direct contact with ice water. Warmer dough temperatures are preferred while using Saf-Instant Gold; this decreases the need to cool doughs to maintain proper fermentation. An increase of 3°-5°F over normal dough temperatures may be required to achieve desired fermentation level.
Storage
For best results, store in an airtight container in the freezer for 12 months or longer. There is no need to thaw the yeast before using.
