Basic ingredients pasta dough mix is a convenient blend of durum semolina flour, specially formulated for making homemade pasta. Ingredients: Durrum Semolina.
FRESH PASTA
(USING PASTA MACHINE)
(Enough for approximately 3 or 4 persons)
2 cups Basic Ingredients’ Pasta Dough Blend(approx. 350g)
A pinch of salt (optional)
180-200mL of Liquid (3 large eggs plus 1 Tablesp. olive oil, the rest water)
BREAD MACHINE: Place all of the above ingredients into a bread machine and set to dough
setting. Don’t allow your bread machine to labour (stop because dough is too dry). Remove from
bread tin and place into a plastic bag and allow to rest for approximately 15 minutes.
FOOD PROCESSOR: Combine all ingredients into a food processor. Use dough attachment and
allow food processor to form a smooth dough. Allow to rest for approximately 15 minutes.
FORMING PASTA SHEETS
Cut dough in half or thirds. Press flat using rolling pin or palm of your hand. Set the pasta machine
on the lowest or thickest setting (setting 0) and feed pasta through the rollers. Fold pasta sheet in
half and feed through rollers again. Continue this process adjusting the thickness dial until dough is
desired thickness. When adusting the thickness dial, only put through a single layer of dough (don’t
fold). Sprinkle dough and pasta machine with plenty of extra plain or bread Flours to avoid sticking.
The pasta sheets can be used immediately as Lasagne sheets or Cannelloni tubes.
After dough sheet is appropriate thickness (setting 4 or 5), feed dough into required attachment ie.
Fettucine or Tagliatelle. Place into boiling water and cook pasta for approximately 2 to 4 minutes.
PASTA DOUGH VARIATIONS
Note: Other dry ingredients being replaced for Pasta Flours may require different liquid amounts.
Liquid ingredients should be included in liquid quantity ie. 200 to 220mL
Spinach: 1 cup cooked spinach. Blend in food processor. Add with liquid.
Tomato: Blend 4 Tablespoons tomato paste with liquid.
Herb & Garlic: Add 2 Tablesp. dried herbs to pasta Flours. Add 4 cloves of crushed garlic to liquid.
Chilli: Add 3 teaspoons hot chilli powder to pasta Flours.
