How To Create Steam In Your Oven
Bread baked in an oven can be enhanced by creating steam in the oven. The steam will help “seal in” the crust, to make it become crispier.
Place an old skillet, or any metal vessel at the bottom of the oven before turning it on. Crank your oven up to 230°C + if you can. For even better results fill it with some old nuts, screws or bolts.
Once the proven dough has been placed in the oven, pour 100-200ml of hot/warm water over the tray. This will create plenty of steam!
After 10 minutes, open the oven door for 5-10 seconds to vent the oven, as by now any moisture will be detrimental for further crust development.
Lower the oven to 190-200° to finish your baking.
