Do I need yeast with Tradizy®?

For many lean breads such as baguettes, rustic loaves and ciabatta, Tradizy® can be used without additional yeast.

However enriched doughs such as brioche or sweet breads may include yeast depending on the recipe.


How much Tradizy should I use?

Typical usage:

3–4% of flour weight

Example for home bakers:

  • 500 g flour → 15–20 g Tradizy

  • 1 kg flour → 30–40 g Tradizy


What breads can I make with Tradizy?

Tradizy works in many breads including:

  • Baguettes

  • Ciabatta

  • Rustic sourdough loaves

  • Sandwich bread

  • Pizza dough

  • Focaccia

  • Brioche
