Rekord Instant Dry Yeast can be used in a wide variety of risen baked goods, including bread.
Instant dry yeast is more granulated than active dry yeast, allowing it to absorb liquid quickly. Therefore no rehydration or proofing is required before being mixed into flour.
This yeast will give you a fermentation increase of 30% to 40% compared to active dry yeast. Yet it weighs 3-4 times less than compressed yeast. It can also resist difficult climatic conditions so is perfect for use in locations unfavourable for fresh yeast.
Instant yeast means instant use. You can open the packet and immediately mix in with your dry ingredients or sprinkle over the batch. No rehydration needed.

If you are unsure of how much yeast to use, here are some guidelines:
- 2kg of flours/mix = 4 loaves
- 5kg of flours/mix= 10 loaves
- 10kg flours/mix = 20 loaves
To keep your yeast fresh, store in an airtight container in the fridge or freezer. It should then keep for at least 6 months.
