Caputo Integrale Flour is a whole wheat flour, naturally rich in wheat germ and bran. A healthy flour that is versatile and can be used in a wide range of baking recipes.
It is made using the traditional method of milling each single grain. The finely ground whole grains mean that the flour is filled with the natural fibre of bran. It is this richness of germ and bran that ensures a genuine aroma after baking.
Caputo Integrale flour has a protein level of 12.5%. It is suitable for all direct and indirect doughs where excellent elasticity and high water absorption are required. It is also recommended for doughs requiring maturation at controlled temperature (refrigeration).
This whole wheat flour requires a longer kneading time to develop the gluten adequately, and longer rise before shaping dough.
